Thanks for all the recipes am always on the look out for new things to cook, you've inspired me to post a few of my own.
This cake looks great, I might give it a go but experiment with gluten-free flour and a bit of extra liquid as I wheat flour upsets my stomach.
I've never tried using gluten free flour but I was looking for similar recipes on the Internet as my mum forgot to put the baking time in the recipe when she mailed it to me. While I was looking for an approximate baking time I saw a couple of recipes for similar gluten free loaves. As far as I can tell, the main difference is whether the gluten-free flour is self raising or needs something added to it.
Thanks I'll have a look. You normally have to add baking powder to Gluten free flour as there isn't a self-raising equivalent and extra liquid as it absorbs more. I've also just discovered a product called gluten-free gluten (I kid you not) which puts the elasticity back into the flour and makes everything a little less crumbly.
